Water is mythical, a legacy that has shaped civilizations, religions, and popular beliefs.

In Japan, it has a double identity: it can be the worst enemy because of the natural disasters it causes every year; and a best friend because of its place in the five elements of Buddhist culture and its prominent role in the production of sake.

Respected, even venerated by some, water is more than merely a diluting liquid. For sake production, for example, it represents 30 times the volume of rice used, since producing one litre of sake requires more than 30 to 40 litres of water!
